Allan Hartmann is the brains behind all of the coffee processing at Finca Hartmann – over the past 7 years our Director of Coffee Josh, has had the privilege or working with Allan to develop a complex and fruity cup profile that scores extremely high on the cupping table.

Allan is a man of few words – but his actions speak volumes. Candy Cane is a blend of Chico Gallo & Pacamara that is picked at optimal ripeness, the cherries are left to anaerobically ferment in skins for 48 hours before being drained and dried on raised beds for 15-20 days. Once dried, the coffee is carefully pulped and kept in pergamino until contracts are secured.
